This cool coffee shop is the brainchild of 30-something husband-and-wife team Nikki Neilson and Craig Stonis, who’ve been “out there” themselves — they once quit their jobs as dental hygenist and carpenter, respectively, to travel the country with their dog in a 24-foot trailer. Between hiking, biking, skiing and canoeing (and taste testing from some of the nation’s most innovative coffee shops) the couple envisioned a future that would be fulfilling, artisanal and community-minded. They combined Nikki’s experience as a barista in Oregon with Craig’s passion for home-roasting... and Out There Coffee was born.

This isn’t just a career — it’s a way to connect. Nikki and Craig showcase the work of locals artists and work with other businesses on cool, tasty collaborations. They helped the local Gusto Brewing Co develop an Out There English ale infused with their Ethiopian Yirgacheffe coffee beans. As a socially conscious startup, Out There also espouses an eco-friendly ethos — think stainless steel straws and upcycled countertops.
